My First Attempt at OAMC - I LOVE IT!!!

So I mentioned about a week ago that I was going to try my hand at OAMC (Once a Month Cooking). I have to tell you, it was quite a lot of work over a couple of days but SO WORTH IT!!!! I didn't make as much as I originally had wanted to becuase I didn't get around to doing it until the second week of February, but I ended up with lots of goodies to put in the freezer for some simple breakfasts, easy weeknight meals and yummy afternoon snacks for the kids. Here is what I made:

Shepherd's Pie - 2 meals
Whole Wheat Waffles - 5 meals
Brown Rice - 2 meals
Banana/Chocolate Chip Mini Muffins - 4 batches
Apple/Cinnamon Mini Muffins - 3 batches
Homemade Refried Beans - 5 meals (These were REALLY yummy!)

Stay tuned for my OAMC plan for March! I have TONS of meals planned and can't wait to stock my freezer up again!


  1. Can I just say I love all that you made. Would love the recipe for the Apple Cinnamon Mini Muffins. My twins would love those. Great job on the cooking. It's so tough but so worth it once you get it done! Love your blog :-)

  2. Daisy- It is kind of funny that you requested the muffin recipe cuz' it was kind of a throw-it-together-and-see-if-they-turn-out kind of thing. First I used some "Master Muffin Mix" that I had sitting around in the pantry. It was getting a little old and I suspected it needed to be used up, and quick! Then I grated up some apples from the fridge that had major bruises (I cut off the bruises of course), added a little cinnamon and of course some brown sugar on top before cooking. For whatever reason, no matter what flavor it is, if it is in the mini muffin size, my kids think it is the greatest thing ever! (Maybe I need to find a way to incorporate cauliflower into a muffin?) Anyway, here is the "recipe". Enjoy!

    Master Muffin Mix:
    6 cups Whole wheat flour
    6 cups white flour
    4 T. baking powder
    2 t. salt
    2 cups sugar
    Whisk together and store in air-tight container for up to four months.

    Apple Cinnamon Muffins
    1/2 C. applesauce
    2 T. canola oil (I used veg.)
    1 C. milk
    2 grated apples
    1 tsp. vanilla
    2 3/4 C. master muffin mix
    1 tsp. cinnamon
    2 eggs

  3. I love it, Lindsey! I do this occasionally, too, and it is so nice to have all those things ready. Can you freeze rice? I never thought about doing that...

    Looking forward to seeing what you OAMC in March.

  4. This all sounds wonderful! It has been so wonderful to pull a meal out of the freezer on the days when nothing else is going well and know that at least dinner will be successful! Where are you getting recipes from?

Teeni- A lot of our recipes come from We are trying to only eat healthy, WW friendly meals so it is a little bit more complicated to do the OAMC thing but I am finding some really good recipes out there that don't involve cream of something soup and tons of cheese. We also get a lot off of the Weight Watchers web site.

    Jen- Just found out myself that you could freeze rice. From what I read, as long as you freeze it fairly thin and flat, it sould be okay. Just reheat in the microwave with maybe a little broth or water. I haven't used mine yet, but I am hoping for good results!
